Happy February 14th

I am not normally the biggest fan of M&M’s©…but Peanut Butter M&M’s, well now that’s a different story. While at the grocery yesterday I randomly stumbled upon the “Valentine” edition of M&M’s with pink, red, and white colors (okay FINE I may have just been browsing the candy aisle), and they were just too perfect to pass up. How could I say no?

One problem—I now needed to figure out a good recipe to showcase them, and that would make a good gift for my boyfriend friends.

I thought about putting them in monster cookies…nahh…how about brownies? But I just adore box brownies, and wanted to make something homemade. So I came up with these Valentine Blondies!

Ingredients:

1 stick butter
1 cup packed brown sugar
1½ teaspoons vanilla
2 eggs, lightly beaten
1½ cups flour
½ t baking powder
¼ t baking soda
¼ t salt
¾-1 cup of chocolate of your choice (I used 1/3 c semisweet chocolate chips and the rest Peanut Butter M&M’s)

Directions:
Melt butter and add brown sugar. Mix until incorporated then set aside to cool.
While it’s cooling, mix the dry ingredients together.
Once the sugar mixture is cooled, incorporate the eggs and vanilla. Then incorporate that into the dry ingredients, being careful not to over mix

Add chocolate and spread in 9X11 inch pan (9X13 or 8X8 will work just depending on the thickness you want).

Bake for 12-18 minutes in a 350 degree oven. Because ovens vary, check periodically to keep from overcooking.

Once cooled (or hot out of the oven), cut and enjoy!

With the texture between a cookie and a scone, these still maintain the simplicity of making brownies. Perfect paired with a latte or cold glass of milk.

But that’s just me :)
